Gooey Brownie in a Mug

This is one of those diet inventions. I needed a chocolate infusion and didn't want a pan of brownies in the house.

This is a typical chocolate cake in a mug recipe. But, I substituted the flour for cornstarch, which produces a silky finish with much less carbs and I substituted the butter for fat free mayo. This lowers the fat, but the big thing it does is turns it from a cake like texture to a heavy, dense brownie texture.     

So, it's a dessert, not diet food, but it's one that's not going to break the bank. The diet bank. That made more sense in my head. Oh, and it actually tastes good. Like rich, decadent good.

Also, I used sugar free chocolate chips! Yeah!


Measured out 1 oz of chocolate chips and 3 Tbl fat free mayo, then I microwaved these, just 15 seconds and then stir until smooth.
Set this aside and in another bowl, mix up the cocoa powder, egg, sugar, vanilla, cornstarch, salt and baking powder. It will be very thick. And I used Splenda instead of sugar.


Scrape the melted chocolate mixture into this and stir it up slightly.
Add another 1/2 oz of chocolate chips. They won't be melted and mixed, so after it cooks, you will have melty chocolate spots throughout the brownie.

Then, all you have to do is lightly oil a large coffee mug and scrape all this chocolatey goodness into it.

I know it's messy, but I wanted you to see that it doesn't fill the mug much. Once it's cooked, though it'll rise to the top.

Microwave on 80 percent power for about 1 minute and 20 seconds. I like mine just slightly gooey still. You can cook up to 1 minute 40 seconds before it starts to get rubbery. But keep an eye on it and check the top for doneness. There will be pockets of chocolate chips, so check the edges.

 Dense and chocolately.
See? Still just slightly gooey. That's totally okay with me.

The Recipe:
Gooey Brownie in a Mug
3 Tbl fat free mayo, 1 oz sugar free chocolate chips, melted and stirred smooth
In a separate bowl, mix
2 Tbl cornstarch, 2 Tbl dark cocoa powder, 2 Tbl sugar or splenda, 1 egg, 1/2 tsp vanilla
1/8 tsp baking powder, pinch of salt, whip the egg slightly, then add the other ingredients, stirring lightly to combine.
Add the melted chocolate mixture to your bowl and another 1/2 oz sugar free chocolate chips.
Scrape into oiled large coffee mug.
Microwave on 80 % power for 1 minute 20 seconds to 1 minute 40 seconds.
Pay attention as all microwaves are different.

Spoon a little light cool whip on top, or eat plain.

It's a chocolate infusion!

You are far braver than I. I'd have never thought to use mayo instead of butter for a dessert. I'm not very adventurous with stuff like that. lol

Well, I needed something low fat, but creamy. Milk works, too, but it ends up more like cake. I like the brownie texture better.

If I don't have fat-free and use normal mayo, instead of 3tbsp should I reduce it and sub it with either oil or milk or water?
