Honey Balsamic Chicken Tenders

I have been wanting to make this recipe for like weeks! 

I'm so glad I finally did. It's not difficult or complicated or anything. I don't know why I waited so long. Just a throw-together type marinade and a quick skillet cooking and it's on the table.

Perfect for a weeknight meal when you don't feel like cooking because everyone at work is asking you to do things fast because they can't do their own work in a timely manner.

Have you ever heard the phrase, "You failure to plan does not consititute an emergency on my part."

Yeah, that. I'm thinking of having it tattooed on my forehead.


So, back to the chicken. Just toss these ingredients in a bowl: balsamic vinegar, honey, sweetener, salt, pepper, chili powder, garlic powder, onion powder.
I know it looks like a lot of stuff, but it's not. Really.

Cut your chicken into strips, toss them into the same bowl and marinade for about an hour.

Go work out your frustrations, run on the treadmill like I did. Then shower it all away and come of the bathroom like a new woman. Ready to conquer the world.

Or ready for dinner. Either way.
Then, just pour the whole darn thing into a large skillet and cook on medium until done and the sauce has thickened some. The flavors will get deeper and sweeter.

I highly recommend sprinkling red chili pepper flakes over as it cuts the sweetness and adds another flavor component, but I'm like that.
I like sweet and spicy.
I like sweet and salty.

Yum. The chicken is tender and moist. It's sweet with a background bite from the vinegar, deep flavor.

The Recipe:
Honey Balsamic Chicken Tenders adapted from Skinny Ms
4 chicken breasts, cut into strips
1/2 cup balsamic vinegar
1 Tbl honey
3 Tbl brown sugar baking sweetener (or 3 more Tbl honey)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp chili powder
dash salt & pepper

Combine all ingredients in a large bowl and let marinade for an hour. Then pour all ingredients in a large skillet and cook on medium until the chicken is cooked through and the sauce is just starting to thicken (about 15 minutes).
Top with red chili pepper flakes.

Love it! Simple, flavorful and quick. My kind of cooking! :) Will definitely be trying this one.

Also, maybe you should have that phrase tatooed on the palm of your hand instead of the forehead. That way when you tell them to talk to the hand, your hand will talk back to them! hehehehe

Thanks everyone! I just love it when I find something that's so tasty and actually easy, too. It's those weeknight meals when you are hungry and it's late that these really come in handy. My own personal food arsenal. LOL
