Flax Seed Crackers

One day, a girl and her fireman wanted a cracker, but couldn't because they were on a low carb diet.

So, they made a high fiber cracker with flax seeds and were happy, fell in love, got married and ate flax seed crackers with cheese every day.

Actually, the fireman is super insane crazy for crackers. It's one of his hardest thing to go without. So, I've been looking online at different recipes for these. Flax seeds are the same as linseeds, as in linseed oil. So, just remember that most seeds and nuts do contain fat. But they are high in fiber, which lowers the net carbs to almost nothing, and they have lots of protein. Oh, and they contain omega 3 fatty acids. So, know your snack, adjust accordingly.

This takes 1 cup of raw flax seeds and 1/3 cup grated parmesan cheese.
Pour in a large bowl with garlic powder, onion powder and salt. Mix to break up any large pieces, then pour your water in.

Let this sit about 5 minutes. The mixture will be a little watery, but the flax seeds swell as they sit and absorb the water.
Then roll out between 2 pieces of parchment paper. We pushed it down with the back of a spoon and our fingers, but they will be flatter and more even with a rolling pin. And the thicker spots don't get as crunchy. So, try to get it down to 1/8 of an inch.
Bake this at 400 for about 15 minutes, but check it to make sure it doesn't burn. It should be crispy.
Let it cool for a few minutes before you try to break up the pieces.

This is really good with thin slices of Jarlsberg cheese! It really is firm and crunchy and cracker-like.

It is my first attempt at making a cracker, and of course it's not a traditional cracker...

The hardest part of the whole process is staying out of them.

Flax Seed Crackers
The Recipe:
1 cup raw flax seeds
1/3 cup grated parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 cup water

Mix together, let sit for 5 minutes, then roll out to 1/8 inch between 2 pieces of parchment paper. Bake on bottom parchment paper for 15 minutes at 400.

I love how creative you are with managing cravings and such. I'd have never thought to even LOOK for a replacement for crackers!

Thanks! Well, I think some of these alternatives are good for making better choices for us and our children. I really enjoy these crackers and will eat them as often as regular crackers, even off the diet. It's a change of life thing. I don't want to deprive myself of things I love.
