My Valentine & Pots de Creme

I'm happy to say that my fireman is still the love of my live. And I don't say that just because he did really good this Valentine's Day.

I say it because he's still my friend. We have fun together. I still have a hard time getting to work on time because we are sitting at the table gabbing. At night, we are up late chatting.

Sure, he makes me all tingly with his manly muscles and that look in his eye, but I enjoy him, and I enjoy spending time with him.

This card was on the seat of my Jeep when I got in. It says "I Love you, And I love what you've done to my life." The inside says "And I wouldn't change a thing." It also plays Billy Joel's "I love you just the way you are."

His card was waiting on his dresser for him to find. It had a cafe table with two chairs and coffee cups at the table. We both both something social and coffee related. *big grin*

Then, this was delivered to me at work.

I love orchids, especially Phalaenopsis. Hopefully I can keep it alive.

I'm not really good with plants. But I am going to read up on it and do it, man!
So, when I got home yesterday, I made Pots de Creme. It's pronounced "Poe di crem."

We gave the girl her present, a big stuffed dog in bright, hip colors (her fav) and a bag of M&M's and a package of KitKats, in the morning. We figured she shouldn't have to wait. She squealed. *hehe*

After I got home, we gave the boys theirs. The youngest boy got a 4-pack of Monster energy drink and a Big Cups Reeses & KitKats, the middle boy got a 6-pack of Peach Tea Snapple and Big Cups Reeses & KitKats. Course, he was out with his girlfriend for most of the evening.

I also had this waiting for me on my bed.
The top box was filled with dark chocolate covered caramels.

Below it is the Jason Mraz cd, he listens when I mention what I like. He's so sweet!

Then the bottom box had chocolate covered toffee's, two layers. The bottom layer is covered in chopped almonds!
Best part is that these are sugar-free. So, they are a bit of a stretch, but a better alternative for my diet. And I love them.

They'll last me a while.

I got the idea for Pots de Creme from The Pioneer Woman. She had it on her show last Saturday.

I made a 4th of her recipe, to get just 2 servings. Her original recipe is for 12 and they were small servings. I used sugar free chocolate chips and Peppermint Mocha Kahlua. Yum!

So, 3 ounces of semi sweet chocolate chips.

In a blender with one egg a dash of salt and a heavy teaspoon of any liquor (or vanilla).
Peppermint Mocha Kahlua rocks.

Blend well, it takes a bit of time to get the chocolate chips all broken up. The heat from the coffee will bring up the temp of the eggs and melt the chocolate, but not if it's in too big of a piece.

I had some unmelted chocolate chips at the end, so I think if you scrape the blades where they got stuck, you could correct this. Also, if you doubled this recipe, it would probably help.

Then pour in 1/4 cup extremely hot coffee. We used the morning's coffee, microwaved REALLY hot. Like, scald your tongue hot.

Take out the center plunger from the lid and pour in as you turn the blender on, so it's streaming in.

It gets hot and melty in there. Smells amazing, too.

Blend till it looks combined. Then pour out and scrape into two champagne flutes!
Refridgerate for about 2 hours. They were probably set before this, though.

I made this right after I got home *changed, opened my gifts and kissed my hubby*.

Then, we finished getting supper on the table, and ate. We watched our DVR'd shows Alton Browns last episode of Good Eats, the Dark Side. It was all about dark chocolate. Then it was about time to eat this dark, sweet, treat!

We topped it with a bit of fat free cool whip.

Pretty! Deliciously rich, not too sweet. Nice chocolate taste, amazing texture!

And sat on the couch, side by side and had a little romantic moment.

Orchids! *le sigh* I love orchids, too.

And YUM on the pots de creme. I'm definitely gonna get on that bandwagon soon.

AND...Not to sound all stalkery by repeating myself for the millionth time, but you and your fireman are, like, the most wonderfullest example of twu wuv. ;-)

LOL! Jana, I agree! Is that sad? I mean, it's not always perfect, we have issues, we argue, but I still would rather argue with him than have no conflict alone.
